For the most advantageous pricing, consider purchasing a Whole, Half or Quarter Animal.

If you are wondering “How much meat is that?”, a mixed quarter of beef ranges from 100 to 140 pounds. The amount of meat is dependent on the size of the animal when it is sent to the processor. A quarter animal fills approximately four“48 Quart” coolers.

Another frequently asked question: “How much does it cost?” We charge $12 per pound for customers who purchase a Quarter Animal and $11 per pound for customers who purchase a Half or Whole Animal. This is your final price (not including any delivery costs) after the meat has been cut and packaged. The meat you receive is vacuum sealed and frozen.

Our quarters are “mixed quarters” – meaning, when we collect our packaged meat from our processor, if four customers are splitting one animal, we ensure that each of those four receives a more-or-less equal assortment of cuts of our beef that includes Roasts, Steaks, Fast Meals (Fajita, Shaved Steak, etc), and Ground Beef.

An example of what you are likely to receive in a Mixed Quarter: Arm Pot Roast; Brisket; Chuck Roast or Chuck Steak; Fajita Beef; Filet Mignon; Flank or Flap Steak; Ground Beef; NY Strip Steak; Osso Bucco; Rib Eye or Tomahawk Steak; Shaved Steak; Short Ribs; Sirloin Steak; Sirloin Tip Roast or Sirloin Tip Steak; Skirt Steak; Stew Meat. Approximately one-third of your order will be ground beef. Heart, Liver, Tongue, Cheek Meat and Oxtails may be available by request and are not typically included.

When an animal is processed, the beef carcass hangs for two weeks of aging in a chilled cooler prior to our butchers transforming your beef into Roasts, Steaks, Fast Meals and Ground Beef. Our beef isvacuum sealed and then frozen to ensure the product you receive is in tip-top shape. Vacuum sealed and frozen beef can be stored in your freezer for well over a year.
